I’m in love with The Kale Sofrito !
Today I refused to make a 2nd trip back to the grocery store – and stumbled upon a really tasty twist to Sofrito. Kale Sofrito!
Yesterday I wanted to try this recipe from Skinny Taste, Puerto Rican beans and Rice. The recipe called for a Sofrito made with Cilantro (Is there such thing as sofrito without it? lol) . I’m one of those people that have a STRONG aversion for Cilantro. If you google it – people either LOVE it or HATE it. It tastes like soap water to me!! Seriously!!
For the longest of time – I swore off this little mexican restaurant down the street from my house because thier tacos tasted as if they cooked them in pans that had been washed but not rinsed out well!!!
Eventually I figured out that it was actually the Cilantro! Therefore I now ask for my tacos sans cilantro ! Smh – I just thought they had shady dishwashers/bus boys lol!!!
I apologize to every dishwasher I’ve given a dirty look too – it wasn’t you ! It was me!
Anywho – I realized that the parsley that I PLANNED to replace the cilantro with , per usual, had went bad. I was going to continue the recipe WITHOUT any green vegetables – buttt it looked so BLAND one everything was blended together!! It NEEDED color!! I looked in my fridge and the only thing that I had (and in abundance) was KALE!
I LOVE KALE!!!!
I love kale!! I really do and I love ANY time I have the chance to incorporate this super food into my diet!! SO I did just that ! I didn’t know how it would turn out – but it was AMAZING!!

SUPER EASY SOFRITO WITH A TWIST!
- 1/2 CUP KALE
- 1/2 Banana pepper
- 3 Cloves Garlic
- 1/2 Onion
Place all of the ingredients in a food processor. I use my ninja so anything that chops food will work! Blend ingredients until smooth.
