Slow Cooker Pineapple Pulled Chicken Tacos
This is such an easy and flavorful recipe! This is definitely a "set it and forget it" recipe thats perfect for those lazy days! Slow cooker pineapple pulled chicken recipe that can be served on a bun, in a taco or my favorite - Over a baked sweet potato!
- 2.5 lbs chicken tenderloin or breast
- 28- oz can can pineapple chunks with juice I have also used 2 whole pineapples !
- ¼ c coconut amino acids or Soy Sauce
- 2 T peach or apricot preserves
- 2 ½ Tablespoons of Jerk Seasoning Or whatever is your favorite seasoning blend!
- green onions
In a large crockpot place chicken breast.
Combine pineapple juice from can, Coconut Amino Acids(Soy Sauce) , preserves, garlic powder and pepper in a medium-sized bowl and whisk to combine. Pour over pork tenderloins and add all but ¾ c. pineapple chunks. You will reserve these pineapples for the pineapple sauce.
Set slow cooker to Lo for 6-8 hours.
During the last 30 minutes shred pork and let cook for the remaining time.
I normally add my BBQ sauce directly into my pulled chicken – but you do not have to do this – in case you have people that like it without BBQ sauce. This pulled chicken is REALLY good served over Sweet Potatoes !
