I wanted to share with you a really easy Crockpot Pineapple Pulled Chicken recipe!! This is one of those recipes that tastes like a lot of work went into it – but truly – you will only spend about 15 minutes preparing this recipe!

Make sure you pair this recipe with my Pineapple / Berry Barbecue Sauce ! It’s absolutely amazing !

A few weeks ago Sprouts had Pineapples on sale for .88 cents!! Yall – I went crazy. I probably bought like 10 pineapples lol.  I made pineapple BBQ sauce, Pineapple Pulled Chicken, Pineapple flavored wings, Pineapple smoothie bowls – I went pineapple CRAZY!

Out of all of that craziness and mayhem came the Pineapple Pulled Chicken Recipe!

Slow Cooker Pineapple Pulled Chicken Tacos

Ingredients

  • 2.5 lbs chicken tenderloin or breast
  • 28- oz can can pineapple chunks with juice I have also used 2 whole pineapples !
  • ¼ c coconut amino acids or Soy Sauce
  • 2 T peach or apricot preserves
  • 2 ½ Tablespoons of Jerk Seasoning Or whatever is your favorite seasoning blend!

Extras:

  • Buns
  • cilantro
  • Coleslaw
  • green onions

Instructions

  1. In a large crockpot place chicken breast.
  2. Combine pineapple juice from can, Coconut Amino Acids(Soy Sauce) , preserves, garlic powder and pepper in a medium-sized bowl and whisk to combine. Pour over pork tenderloins and add all but ¾ c. pineapple chunks. You will reserve these pineapples for the pineapple sauce.
  3. Set slow cooker to Lo for 6-8 hours.
  4. During the last 30 minutes shred pork and let cook for the remaining time.

Recipe Notes

I normally add my BBQ sauce directly into my pulled chicken – but you do not have to do this – in case you have people that like it without BBQ sauce. This pulled chicken is REALLY good served over Sweet Potatoes !
