Ingredients
2.5lbschicken tenderloin or breast
28-ozcan can pineapple chunks with juiceI have also used 2 whole pineapples !
¼ccoconut amino acidsor Soy Sauce
2Tpeachor apricot preserves
2 ½Tablespoonsof Jerk SeasoningOr whatever is your favorite seasoning blend!

Instructions
In a large crockpot place chicken breast.
Combine pineapple juice from can, Coconut Amino Acids(Soy Sauce) , preserves, garlic powder and pepper in a medium-sized bowl and whisk to combine. Pour over pork tenderloins and add all but ¾ c. pineapple chunks. You will reserve these pineapples for the pineapple sauce.
Set slow cooker to Lo for 6-8 hours.
During the last 30 minutes shred pork and let cook for the remaining time.
Recipe Notes
I normally add my BBQ sauce directly into my pulled chicken – but you do not have to do this – in case you have people that like it without BBQ sauce. This pulled chicken is REALLY good served over Sweet Potatoes !
