Cilantro Lime Dressing

This will be a super quick blog post!

Just wanted to share with you guys this super delicious dressing ! You can use this on salads or in rice bowls.

I am someone who HATES cilantro , but I totally love it in this recipe ! The Lime juice and Honey compliment the cilantro so well that I don’t notice the taste of soap suds! πŸ˜‚πŸ˜‚
Anywho on to the recipe !!


1 jalapeno pepper, seeded and coarsely chopped

1-2 garlic clove(s)

3/4 teaspoon minced fresh ginger root

Juice of 4 limes

1/3 cup honey

2 teaspoons balsamic vinegar

1/2 teaspoon salt, or to taste

1/4 cup packed cilantro leaves

1/2 cup extra-virgin olive oil


  1. Place the habenero pepper, garlic cloves, and ginger into a food processor or blender; pulse until everything is finely chopped.
  2. Pour in the lime juice, honey, balsamic vinegar, and salt, add the cilantro leaves; pulse a few times to blend.
  3. Add the olive oil and blend. Season to taste with salt before serving.

  2. Is it better on ricebowls or vegetables?

    1. I enjoy it on both. My rice bowl had tons of veggies in it. Zucchini, Mushroom, Avocado, Onions, Peppers ! This goes on practically anything!

  6. How long is the shelf life?

    1. Thats interesting that you mention that. I was wondering this myself. I would say 1 – 1 1/2 weeks tops. The ingredients are so fresh. I know vinaigrette can last 2 weeks. This has lime juice in it (acid) so I would think it would keep almost as long πŸ™‚
